Not only it is wonderfully fragrant and delectable in baked goods, it’s been used medicinally around the world for thousands of years! 🤯 Cinnamon has powerful antioxidant and anti-inflammatory properties. Studies have shown that it can slow the aging process, relieve inflammation, decrease menstrual pain, boost brain function, and stabilize blood sugar. YES PLEASE to all of that! I aim to consume about 1 teaspoon per day. Lately I’ve been adding it to my smoothies and Dandy blend latte. It’s such a warming spice and adds a little sweetness to the flavor profile.

Ingredients

  • 1 egg white
  • 1 Tablespoon coconut oil, melted
  • 1 teaspoon cinnamon
  • 1 splash vanilla
  • 2 teaspoons xylitol (for low glycemic index) or granulated sugar
  • 1.5 Tablespoons almond flour
  • 1/4 teaspoon sea salt
  • 1/3 Cup pecans
  • 1/3 Cup walnuts
  • 1/3 Cup cashews

Instructions

  • Preheat the oven to 275F.
  • Whisk the egg white, coconut oil, cinnamon, vanilla, xylitol, almond flour, and salt together in a small bowl.
  • Stir in the mixed nuts and coat completely.
  • Arrange the nuts in a single layer on a baking sheet lined with parchment or aluminum foil. Bake 20-25 minutes until toasty and fragrant! Let cool about 10 minutes.
  • Devour!

Notes

Recipe can easily be doubled for a crowd.  Store in an airtight container for up to a few days.
