Coconut + Lime Fudge Bites

This is the perfect recipe for:

  • when you have leftover limes to use up
  • when you want something a little sweet but not sugary
  • when you need a snack before a workout or between meals
  • when you need to add healthy fats to your breakfast
  • when you want to bake with your kids

Lately I’ve been buying that big bag of organic limes at the store (you know what I’m talking about 😉). I’ll use them throughout the week, and if I have any leftover, I will make these little coconut lime fudge bites! They really hit the spot and are fun and stupid easy to make.

Coconut butter (also called coconut manna) is an ingredient that’s relatively new to me but I’ve started incorporating it into a lot of different recipes. It makes a really good icing on baked goods (like my cinnamon bread!).

Coconut + Lime Fudge Bites

Prep Time10 minutes
Course: Dessert, Snack

Ingredients

  • ½ cup coconut butter
  • ½ cup coconut oil I used refined
  • 1.5 Tbsp lime juice
  • zest of 1 lime
  • ¼ tsp vanilla
  • 5-10 drops organic stevia

Instructions

  • Melt the coconut oil and coconut butter by placing their containers in a warm water bath for 10 minutes.
  • Using a glass liquid measuring cup, add the coconut oil to the 1/2 cup mark, and then add the coconut butter to the 1 cup mark.
  • Add in the remaining ingredients. Sweeten to taste!
  • Pour into mini cupcake silicone molds or parchment cups. Top with some lime zest if you want!
  • Refrigerate for one hour or until solid.
  • Enjoy for dessert, a little pre-workout fuel, or a snack on the go!

Notes

*If you don’t currently have a good way to juice lemons/limes, you NEED this juice squeezer in your kitchen!  
**I tend to get my refined coconut oil from Trader Joe’s and my coconut butter from Thrive Market.
