Simple Greek Salad
Tonight we are celebrating a birthday, Greek style! My amazing friend Jordan was supposed to be in Athens tonight celebrating (but of course Covid had other plans), so we are bringing Greece to her!
This salad turned out WAY better than anticipated! It’s got your Greek staples like cucumber, tomato, and kalamata olives, plus the addition of sheep feta and chopped mint take it the the next level. It’s SO refreshing and delicious, perfect for summer potlucks and barbecues!
Don’t forget to season your salad with a little salt + pepper 😉. I went a little heavier on the pepper this time since the feta adds a salty vibe already.
Sheep feta is available at Trader Joe’s! They call it Israeli Feta and it comes in a blue container. Regular cow feta is fine too if you prefer!
Simple Greek Salad
Ingredients
- 1 English cucumber, cubed
- 1 cup cherry tomatoes, halved
- 1/2 cup kalamata olives, chopped
- 1/4 cup sheep feta
- 1-2 Tbsp fresh chopped mint
- 1 Tbsp extra virgin olive oil
- 1 squeeze lemon juice
- salt + pepper, to taste
Instructions
- Chop the veggies, combine all ingredients in a large bowl, serve and enjoy!!
