Stuffed Pepper Soup

FACT: This soup requires just 10 MINUTES of your time to make! I’m serious. THIS IS NOT A DRILL.

It’s also friggin’ delicious and reheats perfectly for leftovers (woot woot)!

Remember those baked stuffed peppers, with ground meat and rice and italian flavors? This is that… but in easy and comforting soup form!

I’ve make this recipe three weeks in a row now… just sayin’.

Stuffed Pepper Soup

Equipment

  • Instant Pot

Ingredients

  • 1 tbsp cooking oil
  • 10 oz diced onion
  • 2 green bell peppers diced
  • 1 lb ground beef
  • 1 lb ground turkey
  • 2 Tbsp Italian seasoning
  • 28 oz canned peeled tomatoes such as san marzano
  • 1 cup marinara sauce
  • 5 oz fresh baby spinach ripped into pieces
  • 10 oz cooked white rice
  • 10-15 leaves fresh basil
  • 1 cup shredded cheese optional for serving

Instructions

  • Set the Instant Pot on the Sauté function.
  • Add cooking oil, onions, and bell pepper together in the IP and let cook for a few minutes.
  • Add ground meats and seasoning. Stir to combine and break up the meat. Let brown for a few more minutes.
  • Add canned tomatoes and marinara sauce and stir again to combine.
  • Secure the lid on the instant pot and cook on the Soup function for 10 minutes.
  • Once the soup as cooked and depressurized, add the baby spinach and stire until wilted. The add the remaining ingredients (rice and fresh basil) just before serving.
  • Serve and enjoy!! Optional but encouraged: Add some shredded cheese for serving.
