Super Crunchy Maple+Almond Granola

My favorite thing about granola is the CRUNCH! Who’s with me? I just love that sweet and salty crunchy vibe any time of day.

But don’t get me wrong.. the flavor’s got to be spot on, too 😉. This MAPLE+ALMOND+SEA SALT flavor combo is PERFECT! It has just the right balance of sweet and salty. Keep in mind this granola is not overly sweet (not really my style).. so think of this more as a breakfast/snack granola rather than a sugary dessert granola. You down?

Lastly… this granola has MAJOR CLUSTERS! Like, big a$$ clusters, I’m not even kidding. So if you’re into that, you have come to the right place. It’s fate!

Maple+Almond Granola

Course: Breakfast, Snack

Ingredients

  • ½ cup maple syrup
  • ½ cup almond butter i prefer raw, crunchy
  • ¼ cup refined coconut oil
  • 1 tsp vanilla
  • 4 cups rolled oats
  • ½ cup collagen
  • ½ tsp sea salt
  • ½ tsp cinnamon optional!

Instructions

  • Preheat the oven to 325F.
  • In a small bowl, mix together maple syrup, almond butter, and coconut oil. Microwave in small increments to melt together if needed. Then add vanilla.
  • In a large bowl, stir together oats, collagen, salt, and cinnamon.
  • Pour the wet ingredients into the dry and mix until completely combined and no dry spots remain. The mixture as a whole may look a little dry but that's ok!
  • Pour the granola mixture onto a parchment-lined baking sheet. Using your hands or a flat-bottomed measuring cup, press the granola into a single layer on the baking sheet. This will get you those crunchy clusters!
  • Bake for 30 minutes.
  • Remove the granola from the oven and *carefully* (because it's hot!) break up your single layer of granola into chunks and flip them over on the pan (so that the side facing down previously is now facing up).
  • Return the granola to the oven, then TURN OFF your oven completely. Leave the granola in the oven to dry out for several hours, or even overnight! It will come out perfectly crunchy and clustery.
