THE FUNNEST GRANOLA

Granola will never go out of style. It’s delicious, portable, snackable, versatile, and acceptable at practically every meal!

THIS granola though.. this is special occasion granola. Celebratory granola for sure. Birthday granola. Promotion granola. Just got engaged granola. End of a pandemic granola (omg – too soon??).

It’s actually one of my favorite things to make and give to friends (for a host/hostess gift or just because – as alternative to wine for example!).

This is my go-to clustery, crunchy, perfect granola, AND THEN IT’S TOPPED WITH WHITE CHOCOLATE AND SPRINKLES. I MEAN COME ON.

TLDR: If you need a little more FUN in your breakfast or afternoon snack, I’ve got you!! Round up your oats and start yer ovens!

Ingredients

Wet Ingredients

  • ½ cup cashew butter raw almond butter works too!
  • ½ cup maple syrup
  • ¼ cup refined/filtered coconut oil melted
  • 1 tsp vanilla
  • ½ tsp almond extract

Dry Ingredients

  • 4 cups rolled oats
  • ½ cup slivered almonds
  • ½ cup collagen peptides
  • 1 pinch salt

Toppings

  • mini white chocolate chips as much as your heart desires!
  • sprinkles only your soul can tell you how many is enough

Instructions

  • Preheat oven to 325F.
  • In a small bowl, mix together maple syrup, nut butter, and coconut oil. Microwave in small increments to melt together if needed. Then add vanilla and almond extracts.
  • In a large bowl, stir together oats, slivered almonds, collagen, and salt.
  • Pour the wet ingredients into the dry and mix until completely combined and no dry spots remain. The mixture as a whole may look a little dry but that's ok!
  • Pour the granola mixture onto a parchment-lined baking sheet. Using your hands or a flat-bottomed measuring cup, press the granola into a single layer on the baking sheet. This will get you those crunchy clusters!
  • Bake for 30 minutes.
  • Remove the granola from the oven and *carefully* (because it's hot!) break up your single layer of granola into chunks and flip them over on the pan (so that the side facing down previously is now facing up).
  • Sprinkle mini white chocolate chips over the top of the warm granola. Only YOU can know the right amount of chocolate chips for you! Go as sensible or as crazy as you'd like.
  • Once the white chocolate is a little melty (due to the granola still being warm), sprinkle your sprinkles on top. I like to put the sprinkles on top of the melted white chocolate as much as I can, so it will all stick together once cooled.
  • Return the granola to the oven, then TURN OFF your oven completely. Leave the granola in the oven to dry out for several hours, or even overnight! It will come out perfectly crunchy and clustery.
